I've been thinking about this myself, and I think the best way to do convert massive amounts of tapes to mp3's is just to download mp3's of the songs that you own from a peer-to-peer file-sharing network. This is perfectly legal, since you already own the songs, and are permitted to make copies in different formats for your own use. If you're very concerned about staying within the law, just hold onto the cassettes for proof that you own the music already.
It's tough to get some of the more obscure stuff from file-sharing networks like Kazaa (use Kazaa Lite - no spyware), but it should at least cut out some of your work. You can also borrow other people's CD versions of your tapes and rip mp3's that way.
I agree that anything you can't get on mp3 by other means, you'll probably have to just record in real time. The only disadvantage to this is that your resulting mp3's won't be identifiable by CDDB or other music databases, which can identify your mp3's and give them ID3 tags. These tags make it easier to organize and catalog music, especially when using portable players. So when you make that mp3 of the tape you snuck into the Guns N Roses concert, it won't have a tag. But I think you can submit info to the database and then have it become identifiable.
