Center cancelling is a pretty old technique for removing vocals. As you stated, it has mixed results. Not to mention the fact that the end result is monophonic.
I wonder if an FFT noise reduction effect would work well? You would need a bare vocal passage to make it work right. I've used it to remove other instruments from a sample before, it might be effective as a vocal remover.
I know goldwave has this effect, and I think cool edit might too. Don't know about others.
