Actually there are coming to be more and more ways, to convert things several directions. Even scanning sheet music to MIDI files, or using audio input to generate MIDI sequences. Of course, fiduring out MIDI in general is plenty o' fun in itself!
Cakewalk as well as Voyetra's Digital Orchestrator will display a "Score view" of MIDI ... I even had a utility like them that was bundled with a sound card, that would do this. Most of them might print out the score ...
HOWEVER none of these wares are yet "complete", each appeals to certain types of users, AND when scoring MIDI events, it never seems to appear in notation as you'd expect, might even come out different every time.
Cakewalk is NOT the only vendor offering this, but now there are sheet music notation wares intended to make more or less presentable prints of music ... I've seen two or more that will play as you make the score, allowing you to arrange as you go before printing a final. There is at least some means of making certain crucial MIDI event settings within the program ... the point is to pick a program that allows you to export a MIDI file, which then might benefit from further work in a MIDI sequencing editor ware, and that will also open a MIDI file and convert it into sheet notation -- but again, good luck with that direction!
With these notation wares, at least one has better arranging/editing control in a notation style environ than the MIDI editors ever seem to provide. A MIDI file exported from this method will generally convert back perfectly to recogniseable sensible sheet music when that MIDI file is opened again in the same ware.
But there are getting to be many utilities of all sorts for all platforms. Even simple DOS level utes to tear apart and put together MIDI files, work with instrument defintions, and tools at every computing level on up. I found this discussion here, at www.hitsquad.com, and it's one of very many web sites with utes and links &c.
Some patience and a good search engine ought to unearth a number of things to try out til you find some good toys and tools.
