Audio in to AIFF for Macintosh question

I have a G3 PowerMac with audio inputs. I want to plug my tape deck or turntable into the computer, record music, translate to AIFF and then use my CD writer to save the sounds on audio CD to play in my car. I have Toast (came with CD writer). What else do I need to do this?
