What's a good Mac notation program?

I have a Powermac 7300/180. I write small group fusion and R&B, mostly instrumental, and some songs with lyrics. I'm looking for a program that will let me create scores easily, maybe through my MIDI keyboard or using a MIDI guitar pickup, or if it's easy enough, using the mouse and computer keyboard. I then want to have the program extract the individual parts from the score. Changing keys, and inserting a measure here or there should be easy, and the output from my printer should look professional. Most of all, I want to get something that won't take me months to learn. Any suggestions? Thanks in advance!
