I have been getting several programs for multitrack recording such as Cubase SX 3, Pro Tools LE 6, CakeWalk, etc. I would like to learn a couple of these really in depth, but I would like to learn the most widely used program by professional studios.

If anyone knows what big studios are using, TIA Cool

Well it really depends on what you mean by "professional studios"

The full version of Pro Tools (not LE) would be one of the most widely used systems in pro studios, but this is not simply software - it is a complete solution using both software and hardware and the starting price is around $10,000 for a basic set up.

Now... was it probably smaller studios or home/project studios you actually wanted to know about?

First you have to ask which blue you want, or which blue you are seeking. ProTools LE is compatable with ProTools HD and Accel, it has DV Tools so it can be imported into Avid systems for digital video editing.
Also if you are looking to do it all on the very cheap ... P2P software, bare minimum computer set up and a Sound Blaster card, all I can say is 'GOOD LUCK' ... Been there, tried that, do nut werk gud er rite.
I say, if you don't believe me about PT, go on line, search A/V studios and see which software/hardware they are using. I can guarantee most of them will have PT in their 'A' studio. Hey, digidesign got an Academy and a Grammy award in the last year or so for PT. So, if it has so much cross industry support, why use anything else.
I can also tell you from experience, an LE set up _(hardware, computer and software ... no extras such as monitors, mics, keys, etc...) is going to go around 5 to 7.5k just to get your feet wet ... AND that is if you are using a PC. AND ... if you were really serious ... you would buy a MAC dual G 5, (expect to hear that alot).
Consider an entery level PT LE system, I use the Digi 002 surface unit, adding an Octapre would give you twelve good mic pres to use, you could save a little by building your computer yourself, if you are confident in doing that ... get some upgraded plug-ins, mastering sofware especially ... and you could do it for just under 5.5k and be doing it very nicely.
But get on the net and see what you think, go to the digidesign site and see what they recommend ... they have a User's Conference site in their support page that talks as much as I do here ... plus some ... about which desktop to use, settings for XP, use tips ... but most of all go, dig in and see what you can find out. But for me ... it is definately PT LE. I like it, I use it and it does have a bit of a learning curve to use it completely but it is pretty intuitive.
